Traditionally, Carnaroli rice is used to prepare risotto and is different from the more common Arborio rice due to its higher starch content, firmer consistency and longer grain. Carnaroli rice keeps cooking better than other varieties of rice during slow cooking required to make risotto, because it has greater quantities of amylose. It belongs to the class of "superfine" rice and is often called "king of rice".
